Yellow tea is made by implementing a unique and delicate step that causes mild oxidation to the leaves before the final firing. This step is known as menhuang; it gives the tea more depth in its flavour and reduces bitter taste in the finished tea. Producers from different yellow tea producing regions have their preferred menhuang techniques. Our Huo Shan Huang Ya producer does this by resting the still-moist tea leaves on bamboo trays for hours with clothes covered on top. During this time, he would frequently mix and examine the tea leaves to determine the oxidation progress and timing of the final firing. The success of this step depends solely on the experience and intuition of the tea maker.
